Ruben Sandwich

1 lb pastrami (makes about 6 sandwiches)
Swiss cheese
Sauerkraut
Sour Dough or Rye bread

Sauce:
1 C. Mayo
1/4 c. Ketchup
1 t. Worcestershire sauce
1 T. dried parsley
1 T. horseradish
1 t. grated onion


Broil both slices of bread until golden brown. then remove the one side and on the remaining side add sauce, meat sauerkraut and cheese and stick back in broiler until bubbly. then top with remaining bread (with sauce on it as well!)

bacon wrapped stuffed chicken

4 chicken breasts butterflied and gently pounded thin
any garlic herb cheese (brosin would be good)
bacon
salt pepper

preheat oven to 350

take pounded chicken breast and put a dollup of cheese at one end and roll up. Then wrap 1 slice of bacon around the roll.

Fry in Pan to sear and crisp up bacon. transfer to a cooking sheet and pour remaining juices over the rolls. loosely cover with foil and bake for 15 min. or until cooked through.

lemon garlic herb chicken

these were so good and flavorful!! I hate chicken that isn't flavored enough, and these were awesome! recipe from annie's eats.

13 chicken drumsticks

2 lemons zested and juice squeezed
2 t. salt
1 t. pepper
2 t. dried thyme
1 1/2 t. dried crushed rosemary
4 t. minced garlic

3 T melted butter


Pre heat the oven to 425. Line a cookie sheet with foil.

Combine the lemon zest, juice, salt pepper, dried thyme, rosemary, garlic and pour over the drumsticks in a ziplock bag. Let marinate for 2-3 hours.

Put drumsticks on cookie sheet (skin side up and reserve the marinade)brush with melted butter, and bake for 50-55 min until golden brown and crispy. half way through cooking pour the rest of the marinade over the chicken.

Kari Larsen's Maple Pecan Granola

3 c. old fashioned oats
1 c. pecan pieces (I also add about a cup of raw slivered almonds)
1/3 c. real maple syrup
4 Tbsp. butter (For a healthier version try using unrefined, cold pressed, organic coconut oil.)
1/3 c. light brown sugar (For a healthier version try using molasses instead of brown sugar or use half and half of each. You can try honey too, but it doesn't get a crunchy consistency like when you use sugar.)
1/2 tsp. salt

Preheat the oven to 325 degrees. Melt syrup, butter, sugar & salt. Drizzle over oats and nuts; toss.
Bake 15 minutes; toss. Bake additional 10 - 15 minutes. Toss again while sticky or it will get stuck to the pan. Cool completely.

You can also add dried fruit or chocolate chips (after it bakes) or whatever sounds good to you. I've always intended to try coconut with the nuts in the pre-roasting stage, but haven't wanted to mess with perfection! :)
