Topping:
1/4 c. flour
2 T. sugar
2 T. softened butter
Muffins:
1 c. unbleached flour
1 c. whole wheat flour
2/3 c. sugar
2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1/4 t. cinnamon
2 eggs
4-5 T. melted butter
1 cup buttermilk
1/2-1 T. lemon zest
1/2 t. vanilla
blueberries (or any other berry or fruit!)
mix dry ingredients first and then add wet. mix together and fold in blueberries.
put in muffin cups and sprinkle topping on top.
Bake at 375-400 for 20 min.
