Benihana Salad and Dressing


1/2 c. onion
2 T. ginger root
2 tsp. lemons (use juice and peel)
2 T. fresh celery
1/3 c. rice vinegar
4 tsp soy sauce
1/2 c. salad oil (olive, peanut, and or flax)
2 T. ketchup
2 T. water
2 tsp. sugar
1/2 tsp. minced garlic
1/2 apple (opt.)

For the Salad:
lettuce - a combination of Romaine, Head, and Leaf
Sliced cucumbers
Shredded carrots
Sliced radishes (opt.)
Sliced celery (opt.)
Purple onion rounds
